Carrot Sauce

A sauce made of vegetables? This sauce is great on pasta, meat, or on top of other vegetables like cabbage or cauliflower. Instead of Italian style spices try some chilis, cumin, thyme and make a carrot enchilada sauce or spice it up with your own flair.


  • 5 Carrots

  • 1/2 Onion

  • A few cloves of Garlic

  • White Wine (+ water or stock)

  • Butter

  • Thyme and Oregano

  • Salt & Pepper

  • Honey


  • Sauté onions in butter and add garlic once onions are cooked.

  • Toss in your chopped carrots

  • Add wine to cover (or another liquid), herbs, salt, pepper and cover until carrots are cooked through.

  • Let cool and then use a food processor to puree into a sauce. Add sugar or honey to your taste. More salt to your taste.
